This is a bad definition of ristretto. My understanding is based on spending too much time reading coffeegeek.com. A ristretto is the volume of a single shot (+/-1 oz.), made with a double shot worth of coffee grounds (~17 grams), with the grind recalibrated to achieve a normal ~25 second brew time. If they didn’t mess with the grinder, it ain’t a ristretto. See: http://coffeegeek.com/opinions/aarondelazzer/02-24-2002
